A big part of the bed and breakfast experience is the food! At Casa de Solana, we love to cook and delight in creating fresh and creative entrees for our guests to try. We present a different hot entrée each morning.

You will likely awake to the fabulous smell of something awesome in the kitchen. You’ll lay there thinking, “Hmm … is it sausage apple casserole? Those yummy breakfast pinwheels? Maybe a veggie omelet or tomato bacon tarts? I’d love a pumpkin muffin right now! Maybe it’s those famous blueberry lemon ricotta crepes! No, no, do I smell cinnamon? Maybe it’s Jeff’s cinnamon raisin soufflé. No, that’s not it. Maybe it’s ham or spinach quiche!”

Whatever it is, we promise that you will be pleasantly surprised. So as to tempt you into a visit soon, we decided to share a recipe. Baked Eggs Italiano

  • Yield: 4 Servings
  • Prep Time: 20 minutes
  • Bake: 15 minutes
  • Stand: 5 minutes
  • Total To-Do Time: 40 minutes

Parts & Pieces

  • 1 small zucchini, halved lengthwise and thinly sliced
  • 1/2 cup red onion, chopped
  • 1/2 cup chopped red or green pepper
  • 2 cloves garlic, minced
  • 2 tsp olive oil
  • 6 egg whites
  • 1 egg
  • 1 cup fat-free milk
  • 1 tbsp shredded fresh basil
  • 1/4 cup shredded mozzarella
  • Garnish of your choice, e.g., tomato, scallion, parsley, etc.

How-To

  • Preheat oven to 350 degrees F.
  • In skillet, sauté zucchini, onion, pepper, and garlic in the olive oil until onion is tender.
  • Set that mixture aside.
  • In separate bowl, mix together the eggwhites, egg, milk, and basil.
  • Add to the egg mixture the ingredients from the skillet.
  • Pour into quiche dishes or ramekins.
  • Bake 15-20 minutes or until set.
  • Sprinkle mozzarella over each dish.
  • Garnish as desired.
